Adapted from a 13th Century French guide to housekeeping, the 'Bochet', or French Black mead is a challenge to make, but we hope you'll agree has fabulous results. The honey is simmered for several hours before fermentation, caramelising an darkening in colour, then fermented with various botanicals to create a very different experience to our regular meads. This one incorporates Welsh honey, our own pressed apple juice from a local orchard and Sri Lankan cinnamon.
