Adapted from a 13th Century French guide to housekeeping, the 'Bochet', or French Black mead is a challenge to make, but we hope you'll agree has fabulous results. The honey is simmered for several hours before fermentation, slightly caramelising and darkening in colour, then fermented with various botanicals to create a very different experience to our regular meads. This one incorporates Welsh honey, white chocolate and toasted pecan nuts to offer up a rich complexity.
